FOR THE DRESSING:
Put the flour in a large bowl like a fountain, creating a central space. Add the sugar and CRUDIGNO corn germ oil, while sideways put the salt in a small bowl made from the flour. Dissolve the cube of brewer’s yeast in a glass with a little warm water. With your hands begin to mix by adding the mixture of water and yeast. Knead vigorously with closed fists until a homogeneous mixture is obtained. Finally, slightly raise the dough and pour under the other water and continue to knead until it has absorbed all the liquid. In the end, the dough will be very soft and probably slightly sticky. With a little flour, form a loaf, cover it with cling film and let it rise for about an hour until it has doubled in volume. Take a size and line it with baking paper. Roll out the dough, make dimples with your fingertips and add a brush of water and CRUDIGNO extra virgin olive oil to the surface and bake in a preheated oven at 200 ° C for 20/25 minutes. Once ready, take the focaccia out of the oven and cut it into portions with a pizza cutter and let it cool. Finally, dress it by spreading the stracchino cheese on the base and adding the previously washed and cut into strips, the salmon into small pieces, and the mozzarella into strips. Garnish with CRUDIGNO extra virgin olive oil and serve.
